I got a <a href="http://estouest.blog.lemonde.fr/2010/02/15/homemade-sourdough-bread/" target="_blank">crash course in sourdough bread baking</a> but was still a little dubious as my track record with looking after living things isn&#8217;t that great.  Maintaining a starter felt all too much like having to take care of a plant or a <a href="http://en.wikipedia.org/wiki/Tamagotchi" target="_blank">beer smelling tamagotchi</a>. My last attempt of growing rosemary and thyme ended up in the bin. Luckily <a href="http://chocolateandzucchini.com" target="_blank">Clotilde from Chocolat &amp; Zucchini</a> has been doing a great job writing about <a href="http://chocolateandzucchini.com/archives/2009/07/natural_starter_bread.php" target="_blank">sourdough</a> with <a href="http://chocolateandzucchini.com/archives/2009/11/sourdough_bagels.php" target="_blank">plenty</a> of recipes.</p>

<p style="text-align: justify;">Sourdough or a natural starter is a combination of fermented flour, water, wild yeasts and friendly bacteria which is used to leaven bread. It&#8217;s a tradition to name your starter, so I decided to baptise mine &#8220;Lucca&#8221; as I&#8217;m testing and researching sourdough bread recipes for some <a href="http://www.biggertable.com/retreat/" target="_blank">culinary workshops</a> I&#8217;ll be doing in Tuscany near the town of <a href="http://images.google.fr/images?q=lucca%20tuscany&amp;oe=utf-8&amp;rls=org.mozilla:en-US:official&amp;client=firefox-a&amp;um=1&amp;ie=UTF-8&amp;sa=N&amp;hl=en&amp;tab=wi" target="_blank">Lucca</a>.</p>
<p style="text-align: justify;">I went about feeding my starter every day (organic white flour and filtered water). I accidently put it in the fridge and it froze but I managed to bring it back to life. It&#8217;s quite warm in Paris (Spring has finally kicked off) which is just the kind of temperature Lucca likes. A week of feeding and I thought it was about time to put Lucca to a test. I used the <a href="http://www.thefreshloaf.com/node/9346/123-easy-formula-sourdough-bread" target="_blank">1 2 3 sourdough recipe </a>which is pretty fool proof. I went for a mix of wholewheat and white flour with a sprinkling of seeds. I made my sponge early in the morning, gave it 6 hours and then made the dough in the afternoon and left it to rise for a further 6 hours and by 10pm I had a fresh loaf. I must say I&#8217;m very impressed with the crust which is made by putting the dough in a oven proof dish with a lid to bake. The water evaporating from the bread creates steam and makes a very crunchy crust. Another plus with sourdough is the bread keeps really well. Even a week later toasted it still tastes great. <p style="text-align: justify;">Once upon a time there were two Brit girls who met in Paris over <a href="http://www.rkhooks.net/2008/04/24/atelier-de-muffins-at-la-cocotte/" target="_blank">muffin making</a> at an <a href="http://www.lacocotte.net" target="_blank">adorable cookbook store</a>. They soon found out that they had many things in common: a pâtisserie diplome from Le Cordon Bleu, the love for food and <a href="http://khookie.com/2009/02/21/last-nights-lesson-small-people-dont-mosh-well/" target="_blank">lots of fun</a>.</p>
<p style="text-align: justify;">They had many adventures in <a href="http://www.rkhooks.net/2009/05/14/rose-ricotta-clouds-with-strawberries/" target="_blank">Paris</a> and <a href="http://www.rkhooks.net/2009/04/15/mouth-watering-mash-up-i-at-the-loft/" target="_blank">beyond</a>. But the day came when Frankie departed to a far away land called Australia. Rachel was very sad that her fun loving foodie partner in crime was leaving but was determined that no matter how many thousands of miles away <a href="http://francescaunsworth.wordpress.com/about/" target="_blank">Frankie</a> was, she would make sure they would continue to have more edible adventures.</p>
<p style="text-align: justify;">So Frankie left for the land of Oz in September. On a cold wet Autumn night in Paris Rachel discovered her golden ticket (in form of a special Malaysian Airline deal) away from the greyness of Paris. Very excited about going to the land of kangaroos and barbecues she sent Frankie an electronic mail and that&#8217;s how they both decided to tell an edible  immigration tale in Sydney.</p>
<p style="text-align: justify;">Many Australian history and culinary books, skype calls, emails and photos later Rachel arrived in Sydney. And this is the tale they told:</p>
<p style="text-align: justify;"><strong><span style="text-decoration: underline;">Edible immigration menu</span></strong></p>
<p style="text-align: justify;"><span style="text-decoration: underline;">1. Shaken and shipped to shore</span><br />
Hibiscus and ginger Bundaberg rum cocktail.<br />
<span style="text-decoration: underline;"><br />
2. First encounter with native grub</span><br />
Goat&#8217;s curd and macadamia nut grubs on dehydrated date leaves.</p>
<p style="text-align: justify;"><span style="text-decoration: underline;">3. A fling with fish before flame</span><br />
Kingfish tartare served with finger limes.</p>
<p style="text-align: justify;"><span style="text-decoration: underline;">4. Desperately seeking sea cucumber, serving sotong satay instead</span><br />
Coconut and lemongrass rice and spicy Asian peanut caramel cake with baby octopus satay and cucumber.</p>
<p style="text-align: justify;"><span style="text-decoration: underline;">5. Cuppa tea with dundee</span><br />
Homemade special brew served with marinated crocodile sticks.</p>
<p style="text-align: justify;"><span style="text-decoration: underline;">6. Bushbride&#8217;s ration pudding with Granny Smith&#8217;s pickle</span><br />
Duck pudding with granny smith puree and pickles accompanied with damper bread.<br />
<span style="text-decoration: underline;"><br />
7. Easy as peasy pie</span><br />
Downunder puff pastry base with slow cooked vegemite lamb, pea purée, mushroom caramel and warrigal greens.</p>
<p style="text-align: justify;"><span style="text-decoration: underline;">8. Fosters-free lager and lemon sorbet</span></p>
<p style="text-align: justify;"><span style="text-decoration: underline;">9. The great dessert debate </span><br />
Pavlova with fresh cream, strawberry jelly , lemon curd and passionfruit.</p>
<p style="text-align: justify;"><span style="text-decoration: underline;">10. Freshly spun edible wool</span><br />
Coffee candy floss.</p>
<p style="text-align: justify;">Each of the dishes were based on facts that they had discovered while doing research. Here are some:</p>
<p style="text-align: justify;">1. Rum was the number one drink with the 1st settlers and convicts.  It was even used as a currency.<br />
2. Similar in taste to almonds, the witchetty grub was originally eaten either raw or cooked in hot ashes by aboriginies.<br />
3. Despite being one of the richest fishing grounds in the world, meat was still favoured by the first European settlers due to it&#8217;s association with the high life back home.<br />
4. As early as the 16th century indigenous North Western Australians traded sea cucumber with Chinese traders making it Australia&#8217;s first export item.<br />
5. The first settlers clung to their British roots becoming the world&#8217;s heaviest tea drinkers.<br />
6.1. One of the world&#8217;s most successful apple varieties was thanks to Granny Smith who arrived in New South Wales in 1838. She tipped some rotten crab apples into her orchard and from there the variety we know today blossomed.<br />
6.2. Not until the Second World War or perhaps a little earlier was the pie mentioned as a national dish. Vegemite, another national favourite, was first advertised as nourishing for the whole family. Except for one irony, the spread that epitomised `family goodness`was made from brewery waste.<br />
7. In 1864 the cookery book &#8220;Australian Aristologist&#8221; quotes a medical opinion on the &#8220;Danger of the meat pie&#8221;. Not leaving a hole in the crust traps the poisonous gases.<br />
8. It was Baron Liebig in 1842 who discovered that Bavarian brewed beers did not turn sour on contact with air like other Australian beers. The German name was &#8220;Lager -bier&#8221; (the German word lager means to store) hence the name of Australia&#8217;s most popular alcoholic drink.<br />
9. The pavlova is said to have been invented in Perth&#8217;s Esplanade Hotel in 1935 after the famous Russian ballet dancer. However the New Zealanders claim that a chef in a hotel in Wellington, created the dish when Pavlova visited there in 1926 on her world tour<br />
10. With 1 million sheep recorded in 1830 (jumped from 100,000 in 1820) the wool industry was Australia&#8217;s biggest export, worth roughly 2 million dollars.</p>

<p style="text-align: justify;">The  journey began with a Eurostar train from Paris to London followed by a  12 hour flight from Heathrow to Kuala Lumpur where I had to strip off  all my winter layers (tights, jumpers, jacket, scarf, gloves, woolly  socks&#8230;) as Malaysian heat is like being in an enormous Sauna. Enough time  in Kuala Lumpur to enjoy some <a href="http://www.rkhooks.net/" target="_blank">Won Ton Mee</a>, one  of my favourite dishes. Quick breakfast of soft boiled eggs, Kaya  (coconut jam) toast and <a href="http://en.wikipedia.org/wiki/Teh_tarik" target="_blank">teh  tarik</a> before boarding another 8 hour flight to Sydney. Food on the  flights consisted of a curry option for dinner, lunch and breakfast. That&#8217;s Malaysian airlines for you.</p>
<p style="text-align: justify;">8 hours later touchdown in Sydney where it was pleasantly hot but thankfully without the stickiness. It was straight in a cab to Edible Immigration Tales Headquarters. No time for jetlag as there was plenty to discuss, prepare and organise. My fellow foodie partner in crime, <a href="http://francescaunsworth.wordpress.com/about/" target="_blank">Frankie</a> and I had been working on this project since November when I had booked my flight. Menu ideas, press and marketing campaign, bookings and other bits &#8216;n bops had been  done via emails, skype calls, photos and waving things at our tiny web cams. So it was good to be able to sit down and discuss things face to face</p>

<p style="text-align: justify;">The following 5 days were a mad rush of running around, cooking,  shopping, organising, sticking&#8230;. basically turning an apartment into a   restaurant. I got stuck into writing all the menus, tea labels and  edible immigration facts by hand with a pot of ink and quill which took  me a good half a day to do. Needless to say by the end of it I had hand  cramps and my fingers were stained black from the ink.  I did manage to  get out and visit Sam the butcher, the local organic shop and the  supermarket.</p>

<p style="text-align: justify;">Last minute testing/cooking would kick off once Frankie had  come back from her day job (still don&#8217;t know how she managed to do  both). We then roped in the whole family with Frankie&#8217;s parents picking  up various groceries, chairs and running other errands. Frankie&#8217;s sister  helping out on the night and Frankie&#8217;s boyfriend putting up with having  a restaurant in his home three nights running. BIG thank you!</p>

<p style="text-align: justify;">On  the day of the first event it was an early start as Frankie and I were  pretty excited about checking out the <a href="http://www.smh.com.au/news/entertainment/good-living/when-a-la-carte-means-byo-map/2010/03/11/1268203353968.html" target="_blank">Sydney Morning Herald</a> to see what they had written  about us. We were relieved to see that it wasn&#8217;t an exposé about the  &#8220;illegal&#8221; underground dining scene <img src='http://www.rkhooks.net/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' /> </p>

<p style="text-align: justify;">Things started to come together when I saw the table set up. We had collected plenty of jars, tins and bottles for the table setting. Naturally they were all scrubbed meticulously before hand. I nipped to the beach to pick up some sand and shells to make little glass candle lanterns.</p>

<p style="text-align: justify;">A wall with sketches of all dishes/courses, guestlist and rundown for the night were hungup in the kitchen. Followed by more cooking. Cutlery and glasses polished. Nice soap and candles in the bathroom. Quick tidy in the kitchen. Then a last minute shower and some warpaint (make up). A last run through of the menu. The aprons were tied on, candles lit and Australian music mix put on and a BIG deep breath before we opened the door to the first guests&#8230;to be continued</p>

<p style="text-align: justify;">After ‘khooking’ up a storm for the past several years in Paris I went back to my London roots with a mouth-watering “mash up” meal on</p>
<p style="text-align: justify;">The unique dinner showcased a range of tasty ideas using food, music and the arts as forms of expression. For this scrumptious supper, I combined far Eastern flavours from <a href="http://www.zoo-republic.com" target="_blank">PikPikZoo</a>, Hong Kong based illustrators with a hint of more local flavour in the form of a musical mash up by <a href="http://www.josephseresindesign.com" target="_blank">Joseph Seresin</a>.</p>

<p style="text-align: justify;">The festive feast took place at the private dinner club <a href="http://www.nunomendes.co.uk/loft.html" target="_blank">The Loft</a>.</p>
<p style="text-align: justify;"><a href="http://www.nunomendes.co.uk/loft.html" target="_blank">The Loft</a> is a private supper club and personal test kitchen of <a href="http://www.guardian.co.uk/news/video/2007/jan/01/audi-a6-nuno-mendes" target="_blank">Nuno Mendes</a>, one of London&#8217;s innovative &amp; revolutionary chefs (El Bulli trained &amp; previous head chef of Bacchus, London). He will be opening his next restaurant, Viajante at the Bethnal Green Town Hall in 2010.</p>
<p style="text-align: justify;"><a href="http://www.josephseresindesign.com/" target="_blank">Joseph Seresin</a> runs by day a bespoke creative studio whose ethos is to provide a tailored solution to your project with a range of creative services encompassing anything from brand identity through to one-off illustrated pieces. At night however he is known to put his creative talents to spinning tasty tunes in hip places from London to Ibiza.</p>

<p style="text-align: justify;">I&#8217;ve been recovering from my 5 week stint <a href="http://khookie.com/2008/12/31/hot-khookies/" target="_blank">here</a>. I finally mustered up the courage to <a href="http://chocolateandzucchini.com/archives/2009/01/mettre_la_main_a_la_pate.php" target="_blank"><em>mettre la main à la pâte </em></a><em> </em>as the French say. It wasn&#8217;t easy to decide what to make but a cake was not definetly on the menu. Nothing better than a bit of kneading to think things over (a great bit of exercise if you do it by hand <img src='http://www.rkhooks.net/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' />  ). With every new year there&#8217;s always a mad rush to start new things or stop old things. It&#8217;s not an easy option to stick with the old and get through the difficulties much easier to give up, especially when you have so many  other &#8220;better looking&#8221; options. I guess it&#8217;s a bit like just putting <a href="http://herbison.com/herbison/broken_eggs.html" target="_blank">an egg in one basket</a> rather than spreading them about. A risk that 2009 is going to be for me and many others. I&#8217;ve finally decided to be a full time professional freelance food creative after several years of doing it part time. It&#8217;s not quite finished yet, still having some teething problems.</p>

<p style="text-align: justify;">Back to the food, I did this recipe twice. Once at home and the other at my parents. Second time round it turned out perfect, I must say myself. The bread had a beautiful texture. Crisp crust with a light airy dough inside topped off with a egg in the middle. A snack or breakfast all-in-one on the run. Yummy <img src='http://www.rkhooks.net/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' />  I&#8217;ve based my recipe on <a href="http://www.amazon.co.uk/gp/product/0007203748?ie=UTF8&amp;tag=rkh-21&amp;linkCode=as2&amp;camp=1634&amp;creative=19450&amp;creativeASIN=0007203748" target="_blank">Andrew</a> <a href="http://www.amazon.co.uk/gp/product/0007203748?ie=UTF8&amp;tag=rkh-21&amp;linkCode=as2&amp;camp=1634&amp;creative=19450&amp;creativeASIN=0007203748" target="_blank">Whitley&#8217;s Bread</a> matters book which I consider one of the best bread cookery books on the market. He uses a wetter dough technique which results in an airy bread. His recipe requires using a specific water temperature which I, being lazy just used warm water. I also tried my hand at <em>air</em> kneading (which involves kind of throwing/stretching the dough from one hand to another in the air) but my arms just ached too much after 10 minutes so I chose to knead the classic way, on the work surface. A little messier.<br />
Just a note the dough will feel wet and sticky at the beginning of kneading. Don&#8217;t feel tempted to add loads of flour. Once you start kneading for a while the dough will start to come together.</p>

<p><span style="text-decoration: underline;">Egg in a basket</span><br />
Recipe adapted from &#8220;Bread matters&#8221; by Andrew Whitley<br />
(makes 8 )</p>
<p><span style="text-decoration: underline;">Overnight sponge</span></p>
<p>5g fresh yeast<br />
130g Water, warm<br />
150g Strong white flour</p>
<p>Mix the yeast with the water and then combine with the flour. Place in a large bowl. Cover with clingfilm and leave in a room with an ambient temperature (if the room is warmer than 25°c than place somewhere cooler) for 12-18 hours. The sponge should triple in size: bubble and have a slight beery, vinegary taste.</p>
<p><span style="text-decoration: underline;">Final dough</span></p>
<p>285g overnight sponge<br />
350g strong white flour<br />
100g stroneground strong wholemeal flour<br />
5g Salt<br />
270g water, warm<br />
15g olive oil<br />
8 eggs</p>
<p style="text-align: justify;">Mix all the ingredients into a soft dough and knead until it becomes silky and stretchy. Leave to rise for an hour. Grease two trays with some olive oil. Divide into 8 parts. Then divide each part into 3. Make 3 long &#8220;worms&#8221; and plait/braid them and join the two ends to make a circle. Make sure to leave a big enough space in the middle to crack the egg in. Leave to prove (double in size). Set the oven to 230°c or the hottest setting. Bake for 5 minutes at the hottest setting and then turn down to 200°c. After 15 minutes take the buns out and crack one egg into each hole. Bake for another 5 minutes (altogether baking time 20 minutes). Leave to cool slightly before eating or eat them cold too.</p>

<p align="justify">Today we have a <font color="#ff00ff">*star*</font> guest appearance (well for me, it is) on <a href="http://www.rkhooks.net">R khooks</a>. I was absolutely delighted when my Mum sent me her entry for the <a href="http://rkhooks.net/2007/09/03/stop-the-traffik-chocolate-event/" target="_blank">competition</a> (she was the one to make me aware of the cause). So I was only to happy to put her entry up on my blog. And what an entry it is! Yummy chocolate with a tangy <font color="#ff6600">orange</font> kick, this bread will be giving the other choctastic entries a run for it&#8217;s money.</p>

<p><strong><font color="#ff6600">My Mum&#8217;s Chocolate &amp; Orange bread</font> </strong></p>
<p align="justify">This recipe required several attempts to get the chocolate and orange flavours right. I don’t think I’ve quite perfected yet. For my taste I would like the orange flavour to come through a bit stronger. But here it comes for what it’s worth.</p>
<p><u>Starter dough</u></p>
<p>200ml warm water<br />
225g wholemeal bread flour<br />
1tsp salt<br />
1 ½ tsp dried yeast<br />
1 tbsp Fairtrade cocoa powder (I used Green &amp; Black’s Maya Gold)<br />
1 tbsp melted orange marmalade</p>
<p align="justify">Mix all ingredients together. The dough will be fairly wet and sloppy. It needs some 5 mins beating away from the edges with a wooden spoon. Or if you feel like it you can give it a ‘squelching’ with your hands. Pretty sticky but works well. Rub off any dough from your hands with flour. Cover in a bowl with a wet cloth and leave overnight or about 8hrs.</p>
<p>In the morning mix the starter dough with the following ingredients:</p>
<p>225g unbleached white flour<br />
1 egg (beaten)<br />
140ml warm milk<br />
50g melted butter<br />
100g Fairtrade chocolate, melted (I used milk chocolate in this case but I think dark chocolate gives it a better colour and a bit more intensive flavour)<br />
2 tbsp of melted orange marmalade<br />
200g ground nuts (hazelnuts, walnuts or almonds will be find)<br />
½ tsp salt<br />
1 tsp cinnamon &#8211; optional</p>
<p align="justify">Mix all the ingredients together with the starter dough. Again the consistence should be fairly sticky, not your usual bread dough. And give it a good beating with a wooden spoon or get your hands in there. Leave for 4 to 6 hours to rise depending on the temperature in your kitchen.</p>
<p align="justify">After it’s doubled in size knock back and transfer into lined baking tin. Leave to prove for about 30 mins while oven is pre-heating (200C/400F/Gas6). Bake for 10mins and then turn temperature down to 180C/350C/Gas4). Bake for a further 30mins. Turn out and cool on a wire rack.</p>
<p align="justify">The chocolate bread should be soft, moist and really yummy, just a slight sweetness from the chocolate and the marmalade. It makes a really good alternative to cakes or tea bread.</p>

<p align="justify">Sorry I couldn&#8217;t resist the pun. I mean pain as in &#8216;le pain&#8217;. I don&#8217;t know whether it&#8217;s the change of season or if there was something in the air but everyone seemed to be extra annoying last week.<span id="more-100"></span></p>
<p align="justify"><em>Deep breath. </em>Anyway last week I was busy baking not just biscuits but bread for the launch of a <a href="http://rktest.files.wordpress.com/2007/09/download.jpg" title="aux bons crus" target="_blank">new Parisian wine guide &#8216;Aux bons crus&#8217;</a> (written in English &amp; French) at <a href="http://rkhooks.net/2007/05/20/la-cocotte/" title="la Cocotte" target="_blank">La Cocotte</a>. The idea was to do a version of &#8216;Le sandwich parisien&#8217; (= sandwich with ham and butter).</p>
<p align="justify">I&#8217;ve been dying to try out some of the recipes from the amazing <a href="http://www.amazon.co.uk/gp/product/0007203748?ie=UTF8&amp;tag=rkh-21&amp;linkCode=as2&amp;camp=1634&amp;creative=6738&amp;creativeASIN=0007203748" title="Bread matters" target="_blank">&#8216;Bread matters by Andrew Whitley&#8217;</a> book I got for my birthday. I had heard about Andrew Whitley when I listened to a <a href="http://www.bbc.co.uk/radio4/factual/foodprogramme_20070819.shtml" title="bbc 4 radio food programme" target="_blank">BBC radio 4 food programme</a>. He has a really interesting philosophy and knowledge on the UK bread scene (do listen to the programme if you get a chance). The book not only has a very comprehensive list of bread recipes (traditional bread, sourdough, croissants, gluten free&#8230;). It also gives a very detailed step by step guide on how to make the best bread and explanations of different flours.</p>
<p align="justify">Andrew Whitley prefers the &#8216;wet dough&#8217; technique which I found very odd (and messy) to begin with. I&#8217;m used to working with a &#8216;drier&#8217; dough (like most home bakers). But after the results I don&#8217;t think I&#8217;ll be going back. I adapted Andrew&#8217;s basic dough recipe and incorporated ham and cheese (instead of the traditional butter) to make my version of a Parisian sandwich. And let me just say the Parisians couldn&#8217;t get enough of it. Within an hour of the start of the booklaunch they had already eaten 4 massive loaves&#8230;if that&#8217;s not a compliment than I don&#8217;t know what is.</p>

<p><u>Le Parisien Bread </u><br />
Adapted from Andrew Whitley ‘Bread matters’<br />
Makes 2 small loaves</p>
<p>300g strong white flour (I used type 60)<br />
300g strong wholemeal flour (I used type 85)<br />
5 g sea salt<br />
400g warm water<br />
8g fresh yeast (4g dried yeast)<br />
4 large slices of ham, <em>cut into strips</em><br />
300g <em>grated</em> <a href="http://en.wikipedia.org/wiki/Gruy%C3%A8re_%28cheese%29" title="gruyere" target="_blank">gruyère</a> (or any strong flavoured cheese, mature <a href="http://en.wikipedia.org/wiki/Cheddar_cheese" title="cheddar" target="_blank">cheddar</a> or <a href="http://en.wikipedia.org/wiki/Comt%C3%A9_(cheese)" title="comte" target="_blank">comté</a>)</p>
<p align="justify">Weigh the flour and salt into a bowl. Measure the total amount of water. Use a little to dissolve the yeast into a paste. Pour the yeast into the bowl and then add the water. Start mixing it together (either using a spoon or your hands). The mixture will be extremely wet and sticky. This is normal, do not add any extra flour. The flour will absorb the water when you knead. Once the dough begins to form. Scrape it out and knead it for at least 10-15 minutes (by hand) or a little less with a mixer until you have a smooth/silky dough. If the dough seems a little dry add a bit more water. Place in a clean bowl. Leave to rise until doubled in size.</p>
<p align="justify">Divide dough into two portions. Dust surface, your hands and rolling pin in flour. Roll out on portion of the dough into a rectangle shape. Sprinkle cheese on the dough (leaving a 2cm border) and then place the strips of ham on top. Wet the edges with some water. Fold together the dough. Make sure there are no holes or gaps. Place on a baking tray (with the folded part at the bottom). Brush the top with some water and leave to rise for an hour in a warm place.</p>
<p align="justify">Preheat oven to the highest setting possible. Put the bread in. Turn heat down to 200°c after 10 minutes. Bake for about 30 minutes or until the crust and bottom are golden and crisp.</p>
