After bookmarking your cake about a gazillion years ago, I finally made it last night and it’s a *great* cake. The gingery-ness is blooming marvellous and I love the soft, juicy texture. Thank you so much for posting such an easy and absolutely delicious recipe.

Knowing my love of *all* things beetroot, Sophie just pointed me to your recipe and what a corker it is. I’ve made beetroot and chocolate cake on many occasions, but this looks even better. Love the deep pink tinge. I shall be making this very soon.

Christy – Like the idea of you making them for your boyfriend and branding them healthy. Well you could say they are healthIER.
Sophie – I recently read a chocolate beetroot brownie recipe in the Guardian, looked delish but I’m still suffering from Christmas overdose. And in regards to the instructions I just can’t do complicated anymore. I want quick easy recipes who wants to spend 30mins reading through the instructions?

Yum! I love the idea of a beetroot cake that *isn’t* a chocolate variation. And it looks so moist too.
Very heartened to see that there are only two lines of instructions (my baking skills are, um, modest)

Ooohhh….what a good way to pretend to eat healthy (or maybe that was just me, who eats carrot cake and pretend that it’s really a salad course!) But I’m glad you did not put celery in the cake. That would have taken the fun out of eating it. Load up the sugar and butter!! Hehe! But maybe i’ll try making these just so i can tell my boyfriend they are good for him! Oh, and happy chinese new year to you!!
