Mango & Mint Granita

So the sunshine has been out in Paris for what seems forever. Rain and clouds are a long distant memory. What better way of celebrating the sunshine than with a simple sunny Granita.

On a more serious note I thought it would also be great to participate in ‘A Taste for yellow‘ food blogger event in aid of Lance Armstrong’s cancer foundation. Cancer affects everyone these days in some form, it knows no boundaries when it comes to age, sex or race.

Barbara from Winosandfoodies (a great little blog gem from downunder in NZ) is hosting it. Check out the round up on ‘Livestrong day’ on the May 16th.

I’ve done another little demonstration video, sorry about the quality, it ain’t that great. I will be doing some serious bust breaking moves (to my friends embarrassment) to this music (J’adore DJ Spinna) on Monday night. Long live Monday night clubbing, so much better than Friday and Saturday.

Simply & Sunny Granita

2 mangoes, peeled
200g/6oz caster sugar
200ml/5fl oz water
Bunch of mint

Make a sugar syrup by dissolving sugar and water over a low heat. Blitz the mango in a blender. Chop mint (keep some to garnish). Mix together sugar syrup, mango and mint. Pour into a container and transfer to the freezer for a couple of hours, whisking twice to break up ice crystals. Serve garnished with a sprig of mint.

Serves 2 or 4 (depends on size of portions)

  1. This is wonderful Rachel . I just love the video. Summer is over down here but I’ll be making this next summer. Granita is a favourite of mine. Thanks for your entry to A Taste Of Yellow.

  2. Mango in frozen dessert just rocks. The texture if the fruit is perfect for frozen items. I made sorbet the other day and the texture was perfectly smooth and silky. Love the idea of a granita, and with the mint it’s like a frozen mango mojito!

  5. We are expecting a warm and long summer here, so I’m keeping eyes open for any sorbet recipes. Your mango & minto sorber sounds good and looks indeed really sunny, so I’m bookmarking it for those sunny days in the future:)
