‘Dreamy’ salted caramels

Single? Having problems finding your future husband/wife?

Well, I might have found the solution. I recently read in ‘Salt’ that in some parts of Sweden there was tradition of making a heavily salted ‘dream porridge/pancakes’. The girl would eat it and then go to sleep without drinking anything. While sleeping her future husband would come to her in her dream and give her water to quench her thirst.Personally I would rather eat lots and lots of these salted caramels to try and recreate the same effect. Salted caramels originate from the Brittany (north-east) region of France where they make butter with the local salt. Hence the salted butter in the recipe.

Salted caramel sweets

Salted caramels

100g salted butter, cubed
20ml water
200ml cream
100g glucose syrup
250g sugar
A couple of pinches of ‘fleur de selor coarse sea salt

Sweet wrappers

Makes about 50

Put water, sugar and glucose syrup into a pan. Place on heat and boil until the sugar mixture becomes a golden blonde colour. Add a couple of cubes of butter (careful the mixture might spit) stir and add cream and rest of butter. Bring the caramel up to 118°c. Remove from heat. Pour into a baking paper lined tin. Chill for a couple of hours. Stick the caramel in the freezer for a couple of minutes before you cut it into cubes. Sprinkle some salt top. If you manage not to eat them all while you’re cutting them, wrap them up.
