by rkhooksLately an extra half an hour in bed has been a lot more tempting than having breakfast. So usually a croissant on the run is the only option. But after a while even that is a bit too much (I really don’t want to start rolling around Paris). These ‘all-in-one’ breakfast muffins make a great alternative.
‘Breakfast-on-the-run’ muffins
100g softened butter
100g golden caster sugar
2 eggs
3 ripe bananas (the riper the better)
125g yoghurt
125ml milk
150g muesli
200g flour
1 tsp vanilla essence
2 tsp baking powder
1 tsp bicarbonate soda
Makes 12 muffins.
Preheat oven to 180°c. Cream together butter and sugar until fluffy. Whizz bananas, yoghurt, milk and egg together in a blender add creamed butter mixture. Sift flour, baking powder and bicarb together. Combine with muesli mix. Fold banana butter mixture into flour. IMPORTANT don’t overmix. Slightly lumpy mixture always makes better muffins. Spoon mixture into cases. Bake for 25-30 mins until the muffins are golden brown and bounce back when touched.
