Crunchy apple, carrot and walnut salad

« An apple a day keeps the doctor away » as they say. This salad was really inspired by the lovely walnuts I got from of a french friend’s garden and some leftover apples I found rolling around in the bottom of my fridge. Fresh walnuts are often a bit soft when you open them, so dry roast them in a pan for a couple of minutes. This will crisp them up and also release a stronger walnut aroma. Make sure you choose hard apples (otherwise you’ll end of with a mushy result) and crunchy carrots

Whisk together oil, vinegar and orange juice. Pour over mixed together carrots and apples. Sprinkle walnuts. Serve.
